A theatrical centrepiece sets the tone: an oversized Black Sesame Egg Tart with Mango and Passion fruit confit, unveiled in a cloud of jasmine tea smoke—designed to be shared among two and savoured.
The moreish selection balances familiar Hong Kong flavours with subtle refinement. Highlights include an Abalone Puff glazed in rich Oyster Sauce and a crispy Taro Puff with BBQ Pork, Conpoy and Pineapple offering a fresh take on a beloved dim sum classic. Thick-cut Corned Beef Sando is a cha chaan teng must-have lifted by prized Ran-Oh egg from Japan while a playful Foie Gras French Toast brightened with Mullet Roe and Pat Chun Vinegar Shallot is humble nod to one of Hong Kong’s most enduring pantry staples, handcrafted using traditional seasonal fermentation methods by a family-owned enterprise dating back to 1930s.

A sweet finale that feels both nostalgic and delightfully unexpected. Familiar Hong Kong favourites are reimagined with a playful French twist: Hong Kong milk tea transformed into a Brûléed Custard topped with Zesty Pomelo, and Silky Vitasoy Panna Cotta in a golden Hazelnut Financier filled with Red Bean. Even the beloved Pineapple Bun makes an appearance—strikingly similar but executed in French style, retaining that irresistibly buttery texture with a signature crumbly crust.
Crafted by Executive Pastry Chef Alexis Watrin who has been calling Hong Kong home for more than a decade, each creation balances indulgence with creativity—from a Chocolate Dessert brightened with Mandarin and a hint of Pat Chun Vinegar adding the lovely zing, to a chilled Mango Pudding with a sparkly Champagne Jelly.
