Guided by Japanese seasonality keenly celebrated by Hong Kong’s foodies, Executive Pastry Chef Alexis Watrin presents a selection of sakura‑ and matcha‑inspired desserts worth a pause from a shopping spree in the heart of TST!

Delicate cherry blossom notes, subtle bitterness of premium Uji matcha, and familiar Japanese flavours take shape in well‑balanced sweet creations, from light mousses to mochi to traditional treats such as beloved honey sponge cake (kasutera) presented with a playful twist —each designed to reflect the joy, freshness and fleeting beauty of spring.

Be sure to capture and share your precious moments at the matcha waffle live station where aromatic, crispy on the outside, chewy on the inside, warm waffles are served with a selection of Haagen-Dazs Ice cream!
