Taking cues from the original recipes of dishes the artist shared with his avant-garde friends during boisterous gatherings, collected in the 1996 book by E. Herscher, Chef Sheldon Fonseca crafted a special dinner menu featuring artisan dishes from southern France infused with vibrant Basque flavors and paired with a bottle of wine of your choice from our selection of Bordeaux, Burgundy, and Rioja picks.
Treat Your Taste Buds with Artisan Delights
Indulge in enticing Ratatouille and Goat Cheese Pinchos, a Striped Salmon that’s a twist on Alice Toklas’s beloved sea bass, char-grilled Firefly Squid with Puntalette splashed with squid ink brush strokes, and artisan Roasted Racan Pigeon with a humble pairing of Peas & Bacon.
For a sweet finale of the menu, the Executive Pastry Chef of The Mira, Smita Grosse, has prepared a chocolate-framed “Still Life” dessert with Hazelnut Cake, Orange Cremeux, and Vanilla Custard, served with edible chamomile flowers.
