Celebrated for cuisine inspired by his travels yet deeply rooted in France, Chef Arnaud found his passion for cooking in the mountains of Savoie and built a career through esteemed kitchens in France before taking Bangkok’s prime fine dining institution, Le Normandie, to new heights, earning it two Michelin stars in the first Michelin Guide Bangkok (2017) and maintaining the enviable level of quality and consistency worth a detour until his departure several years later.
Currently, the owner-chef of Maison Dunand, a chalet-inspired dining venue that has retained One MICHELIN Star for three consecutive editions, Chef Arnaud plates a menu rooted in Savoie and his childhood memories of Normandie yet inspired with his travels through Asia — a signature of quiet confidence and evolution of personal style.

In Hong Kong, his special menu available for 2 nights only is an homage to Alpine bounty — a focused celebration of springtime in the mountains, where the harvest is fleeting and flavour is at its most vivid.
Expect a seasonal mountain journey crafted into a refined multi-course experience featuring standout ingredients such as Omble Chevalier (Alpine char) from glacial lakes paired with white asparagus and fir, Fresh morels with Swiss chard, and Milk-fed lamb lifted by bear garlic.
