There is nothing more exciting about dining out than leaving your menu choices to the Chef. It’s a meaningful sign of mutual trust and respect of culinary flair which Japanese Chefs and diners have a special reverence for.
From September 21, the seasonal menu will capture the bounty of autumn introducing earthy, warming flavors and vibrant seafood. Gourmands may indulge in dishes such as silky Duck Foie Gras Chawanmushi with abalone sous vide cooked for 14 hours with ginger soya, Shiitake mushroom and Curcuma bouillon, which adds delicate spiciness and its beautiful aroma to the creamy melange as well as Fresh Crab meat perfectly paired with unique French ‘yellow wine’ by our professional sommelier.
Shima Aji (or Striped Jack) with its flickering metallic overtones, white flesh and delicate fatty taste is the reminiscence of fading summer. This warm water fish found from central Honshu all the way to Okinawa peaks in August. Prepared by Chef Oliver Li Edomae way with the presentation resembling sushi, the fish is gently cured and served atop finely diced, charcoaled topinambour “rice”, with smoky topinambour skins “tea” with vinegar infusing another layer of flavor.
Wild duck from Sologne, France, is the true highlight of the inventive menu which takes gourmands on a blissful journey from Japanese shores to the woodlands of France, a region bordering with the great arc of Loire River with no less than 2,800 lakes, rich in fowl and teeming with freshwater fish – understandably the favoured hunting ground of Napoleon III.
The duck breast is simply char-grilled to bring out its pristine, natural flavors with just a touch of salt and pepper. Served with homemade blood sausage and gizzard stuffing enclosed in buttery pastry, or Pate en Croute, with demi-glace it’s a modern interpretation of a classic French game recipe with delicate Japanese hints in the sesame and poppy seeds of the pastry shell.
Hearty notes continue in the precious, intense French Aged Beef that is finished off by smoking in dried hay right in front of the Guests – a sensory postcard of countrymen gathering around live bonfires in the season of harvest.
Crispy on the outside and fluffy on the inside, an Egg Soufflé makes the perfect, comforting finish to the voyage.
Remaining on the menu are the ever-popular Umami & Pearls and WHISK’s must-try soja bread oven-fried until golden brown and served with seaweed butter.
