This summer Chef Oliver Li combines the best of the best ingredients from the Land of the Rising Sun and adorns them with the highly-praised summer truffles from France.
Although not as precious as their winter equivalent, with much more robust texture and delicate aroma, the summer truffles are Chef’s perfect companion to cook with and bring out irresistible flavors.
All dishes from golden-brown seared Duck Foie Gras with Matsu Kinoko Mushroom to gentle Amadai Fish with White Asparagus and Pollock Roe, and spectacular 60+ days in-house dry-aged Wagyu Beef from Kagoshima are created around umami-packed Japanese ingredients.
Hiding precious cuts of Japanese, USDA, and Organic Irish Beef Dried in-house in controlled humidity and temperature, the most instense Wagyu beef from Kagoshima aged for 2 months is the real star of this degustation menu.
