Among numerous trophies, Chef Koji Fujita holds the Best Chocolate Show Piece and Best Presentation Award in World Pastry Team Championship (2008) and he is the first place winner of the 2012 World Pastry Team Championship (Team Japan).
Modern interpretations of premium grade powdered green tea from Uji, Kyoto, come together fusing Japanese and French pastry techniques into an artful assemblage featuring sophisticated triple layer Matcha Tart with levels of cheesecake, ganache, and matcha mousse, as well as light and zesty matcha & yuzu jelly “Forest Fairy” Dessert.
Handcrafted by Executive Pastry Chef of The Mira Hong Kong, Jean-Marc Gaucher, all delicate pastries and desserts are made with unique recipes developed by Chef Koji Fujita.
