At The Mira Hong Kong, exclusively for 2 days in May (5 & 6 May) he will showcase a whimsical four hands matcha-themed afternoon tea set prepared together with the hotel’s Executive Pastry Chef, Jean-Marc Gaucher, and finished off in front of the Guests at COCO.
In this whimsical menu, creative and modern interpretations of revered powdered green tea from Uji, Kyoto, come together fusing Japanese and French pastry techniques into an artful assemblage featuring the 13-layers nutty mousse cake with lemon twist “Horoscope” as well as multi-textural Matcha Tart with layers of cheesecake, ganache, and matcha mousse.
In addition, a selection of matcha-inspired desserts and pastries by Chef Kojita will be showcased for a limited time at the café-patisserie COCO and buffet restaurant Yamm in May and June, in celebration of the new first harvest of the Japanese green tea this summer.
