At the event, don’t miss the unique opportunity to get a collector’s dream, limited-edition “100 Point Set” of Chateau Pavie (valued at HK$25,900) – a designer case of 4 award-winning wines each rated with 100pts by Robert Parker and signed by the winery owner and available for pre-order now with the restaurant.
Château Pavie is the largest St.Emilion 1er Grand Cru Classé, with over 35 hectares of vineyards located exclusively on the St-Emilion Côtes. Pavie is situated south-east of the village of St-Emilion and its vineyards lie on a south-facing slope of the famous limestone plateau.
According to the wine critic Robert Parker, the wines of Château Pavie are some of the best in the world. In 2012, Pavie has been classified Saint Emilion Premier Grand Cru Classé (A) along after having previously been a Premier Grand Cru Classé (B) since 1954.
Its wines is typically a blend of 55% Merlot, 25% Cabernet Franc and 20% Cabernet Sauvignon. Since 1998, the grapes have been fermented in spanking new wooden vats with the wine then being aged in 100% new oak bariques for 18 months. It is bottled unfiltered.
Like other vineyards in Saint-Émilion, the Pavie vineyard dates back to Roman times. It takes its name from the orchards of peaches (“pavies”) that used to grow there ages back.
